1 lb tomatilloes (about 12 medium sized tomatilloes)
1 cup cilantro, chopped
2 jalapenos, seeded, pith removed, and chopped
1 garlic clove, sliced
1. Remove husks and rinse tomatilloes.
2. Place tomatilloes in saucepan and cover with water until just covered. Bring to boil and turn heat down to simmer. Cook for 4 to 5 minutes, until just tender. Drain and save cooking liquid
3. Place tomatilloes, cilantro, jalapenos, garlic, and salt in blender. Taste and adjust seasoning
4. Allow to cool and sit. The flavors with develop and it will thicken. Use cooking liquid to reach desired consistency.
Try adding a smashed up avocado, lime juice, or just blending the tomatilloes raw and uncooked.
